Grandma’s Country Kitchen

Delbert is home and doing good. It sure is good to have him home. He is able to walk around all over the house with the help of a walker and can get in and out of bed on his own. He could not do that at the hospital. That is a big improvement. I have to help him with his bath and getting him dressed every morning. He had appointment with his heart doctor on Friday. Our neighbor Smoke Jochum came out and put Delbert in a wheelchair and wheeled him up to garage and got him in my car. I took him to Parkersburg. A nurse came out to our car with a wheelchair to get him. He got a good report. They brought him back out to the car. We came home and Smoke came back out to bring him back down to the house. Our neighbors are all so good. Calling to see if they can help. Home Health is scheduled to give Delbert Physical Therapy about twice a week. Delbert has me up every 2 ¢ hours all night long and other nights every 3 hours.

Delbert has received 3 more Get Well Cards. He wants to “Thank” Joan Lucas, Coy Moffitt and Moundsville Oak Grove Methodist Church for the beautiful cards. They are such a pick-me upper.

March sure came in like a lamb. I suppose it will go out like a lion. We had beautiful weather with 73 degree temperature here on Saturday. Delbert and I set out on the deck that afternoon. I had the doors open letting that nice fresh warm air circulate through the house. I even mopped my side porch, It is 34 foot by 10 foot. It had got dirty over winter.

Smoke Jochum came out and spent an afternoon with Delbert. Kenny Barker came up Friday to visit Delbert and had lunch with us. Coy Moffitt came up to visit us Sunday afternoon. It was so good to have them stop in. It is long days being cooped up here. Grace Kyle called to see how we were doing and to see if we needed any help. It was good to hear from her. Patty Glover and I had a nice visit over the phone one evening last week.

Don’t forget to turn your clock up one hour this coming Saturday night, March 12th before you go to bed as we go back on daylight savings time Sunday, March 13th. I really like the fast time. The evenings will be much longer.

I got a surprise on Saturday evening March 5th. Our son Don, his wife Joyce, their son Issac and our son Ron and his wife Teresa surprised me with PJ’s Pizza and a decorated Dairy Queen Ice Cream Cake to celebrate my birthday a few days early. We had a wonderful time. I have received 3 birthday cards. I want to “Thank” Smoke, Betty and Mark Jochum, Coy, Donna and kids and Ron and Teresa Rush for the beautiful birthday cards. They are so appreciated and sure made my day. I love getting cards.

Did you take notice to that beautiful sunset this past Sunday evening? It was gorgeous, a beautiful dark red. I would of loved to had a picture, but my camera is not working.

Isabella Michael has reached that special age of getting to be 16 years old on the 9th. WOW, that seems impossible. Now this one will blow your mind. I will be 88 years old on the 9th and that is hard for me to believe. James Drain and Sheila Howlett on March 10th. Sheila has reached another wonderful milestone in her life as she will be 95 years young on the 10th. Don Binegar III, Todd Hood and Becky Pancake on March 11th; Linda Copper, Brad Crawford, Brenda Gilbert, Penny Howard and Donna Ward on March 12th; Anna Efaw, Mark Goodfellow, Timothy Grimes, Patty Sagel, Kent Yoho and Bonnie Yost on March 13th; Dana Bohrer on March 14th; Thomas Burkhardt, Charles Daugherty, Chuck Eddy, Jennifer Mason and Matt Quinet on March 15th. I hope you all have a wonderful birthday and many, many more Birthday’s.

You are all in my thoughts and prayers. The Corona Virus is on the rise. People that did not get their Covid shots wind up in the hospital with double pneumonia and also on a ventilator to help them breathe. People that got their shots and still get the virus usually have a light case of the Virus. Please get your Corona Virus Vaccine Shots and the Booster Shot.

I want to send “Deepest Sympathy” to family and friends of Kaye Gorby. I knew her for many, many years. The family is in my thoughts and prayers. May God be with you during this difficult time.

Now for the good part of this column. The “Recipe Section” Lets see what we are going to make this week. First recipe is Scalloped Potatoes and Ham. Second recipe is Ho Ho Cake. Third recipe is Banana Split Salad. Forth recipe is Country Fried Apples. Fifth recipe is Instant Spiced Tea.

SCALLOPED

POTATOES AND HAM

2 cups thinly sliced raw potatoes

™ cup grated onion

salt

pepper

¢ pound ham cut in serving pieces

1 ¢ cups milk

Put half the potatoes in a well greased casserole dish. Sprinkle half the onion, pepper and salt. Add Ham. Cover with the rest of the potatoes, salt, pepper and onions. Add milk until it barely shows between potato slices and top. Save rest of the milk to add during cooking if needed. Cover casserole and bake at 350 degrees for about 60 minutes. Remove cover the last 15 to 20 minutes to allow potatoes to brown on top.

HO HO CAKE

1 box Duncan Hines Devil Food Cake mix

Mix as directed on box. Spread on a cookie sheet, bake for 20 minutes. Cool completely [I place it in freezer on wax paper after coming out of oven]

Filling:

Mix 4 tablespoons flour and 1 cup milk in sauce pan. Cook over low heat until thick, stirring constantly. Cool Completely. [I put Saran Wrap over top of saucepan and place in refrigerator] after cool beat in 1 cup Crisco, 1 cup white sugar and 1 teaspoon vanilla. Beat until creamy. Spread over top of entire cake. Cut cake into 3 equal strips. Stack the 3 layers on top of each other or roll up like a jelly roll. Refrigerate for 1 hour or place in freezer.

Icing:

3-1 ounce packages Chocolate Bake

1 egg

1 teaspoon vanilla

1 stick melted butter

3 cups powdered sugar

2 ¢ tablespoons hot water

Beat together all ingredients. Spread over entire cake and refrigerate. Cake is better if let set in refrigerator for 24 hours.

BANANA SPLIT SALAD

1 can crush pineapple

2 cups water

1-3 ounce box lemon jello

8 large marshmallows

1 banana [sliced]

2 teaspoons lemon juice

™ cup sugar

5 teaspoons flour

1 egg [beaten]

1 tablespoon butter

1 cup heavy cream [whipped]

™ cup pecans [chopped]

Drain Pineapple [reserve ¢ cup juice] set aside. In saucepan bring water to a boil; remove from heat. Add gelatin and marshmallows stirring until dissolved. Chill until partly set. Toss banana with lemon juice. Fold bananas and pineapple into gelatin. Pour into 9×9 inch pan. Chill until firm. Combine sugar and flour in saucepan, stir in egg and reserved juice. Cook and stir over low heat until thickened. Remove from heat, stir in butter. Cool. Fold in Whipped Cream. Spread over gelatin and sprinkle with pecans.

COUNTRY FRIED APPLES

Cooking Apples

Butter

Brown Sugar

Cinnamon

Wash, core and slice apples. Do not peel. Melt butter in heavy skillet over low heat. Add apples. Stir gently to keep from sticking. When transparent sprinkle with brown sugar and cinnamon to taste. Serve Warm.

INSTANT SPICED TEA

2 ¢ cups powdered orange flavored breakfast drink

1 § powdered instant tea

2 ¢ cups sugar

1 package lemon kool-aid

1 ¢ teaspoons ground cloves

1 ¢ teaspoons ground cinnamon

Mix all together and store in container with airtight lid. To make a glass, add 1 or 2 teaspoons to 8 ounces water. Stir well. Add ice and enjoy.
